Gluten Free, Dairy Free -Vegan Potato Salad

Potato Salad made with Vegenaise (with grape seed oil), mustard, sweet pickle relish and shaved carrots. Served with Boiled Egg and Organic Carrot sticks. 
The secret to great Vegan Potato salad is to bake the potatoes instead of boiling. The Flavor of the potato is So much better when cooked in the skin. 
This is my favorite Potato Salad! I've taken this to many a potluck and cookout and even  gluten eating, dairy eating, carnivores prefer it 😉.
