Homemade gluten-free granola bar recipe

4 1/2 cups  gluten-free oats
1 cup spelt 
1 teaspoon baking soda
1 teaspoon vanilla
1 cup butter, you can use dairy free butter if needed, earth balance works great
1 cup honey
  Ad-ins : 1 cup Mini chocolate chips, you can use dairy free vegan chocolate chips if needed. 1 cup chopped walnuts, other options include dried fruits, sunflower seeds, coconut, nuts... (I prefer dried cranberries)
Lightly grease a 9 x 13" pan. In a Large mixing bowl combine butter and honey first. Then add all ingredients except add-ins. Beat hard until combined. Stir in ad-ins. Press mixture into pan – really jam it in there so your bars don't fall apart. Bake at 325 degrees for 15–20 minutes until golden brown. Let cool for at least 10 minutes before cutting into bars. I find a pizza cutter works best for cutting these. 
These were great for a quick snack or to individually wrap and throw in lunchboxes!
